Mutton and Beef

Shahi meat koftay

Ingredients:-
Minced mutton     1/2 kg
Onion   1 large (sliced)
Egg   1
Grind to a smooth paste:
Onion 1 medium


Green chillies  4
Coriander leaves 1 bunch
Ginger  1 inch piece
Peppercorn  6
Cinnamon stick  1/2 inch
Salt to taste
Grind to a smooth paste
Coriander seeds   1 tbsp
Mace  A blade (jaifil)
Turmeric pd 1 tsp
Cardamoms  3 small
Cumin seeds  1 tbsp
Red chilli pd  to taste
Ghee as required
Salt to taste

Method:-
Beat the egg slightly and mix well with the mince meat to bind. Shape this mixture into small balls of about 3/4 inch diameter. In a skillet, place about 8 tbsp ghee and place over a hot fire. Fry the meat balls until they are a light golden brown. Drain and keep aside. In the same ghee, fry the sliced onion to a golden brown. Add both sets of ground ingredients and fry for about 7 minutes. Put in the meat balls along with about1/2 cup warm water and cook over medium heat until the gravy is reduced to a thick consistency. Serve hot.
